Since then, five generations of master pizza makers have maintained the founder's genius, enriching a masterpiece now known and appreciated all over the world.
The secrets of this lasting success are the combination of natural ingredients and the time-honoured method of leavening the dough made with the best Italian stone-ground flours.
The dough is worked exclusively by hand and subjected to natural leavening for at least 72 hours. Once the exact degree of maturation is reached - thanks to a reaction called Maillard - the pizza will deliver, when cooked, the irresistible fragrance and aroma of freshly baked bread.
